Tips for Spinach

It doesn’t matter what the label says (ie: triple washed, ready to eat) you have to check each leaf! Some leaves are gross, sometimes there are dead bugs in the bags, & sometimes they include non-spinach leaves. 

Here’s a non-spinach leaf attached to a spinach leaf! 



And if you’re going to eat it raw, remove all the stems, at minimum. 

Tips for Onions ๐Ÿง…

Always chop onions into tiny little pieces: the smaller, the better. This would be chopped up even more if I had a chopping knife and a cutting board (or a granite countertop). 

This also applies to fruits & veggies if you’re eating them raw. The best salads have the finest chopped veggies. Not only is it better for digestion and to absorb faster into your bloodstream, but also it tastes better to have every flavor in each bite. Yum!

Spicy Tomato, Lentil, & Rice Stew


*Note: Yours may look different. I had to improvise because I only have one burner and it only cooks on high. 

Serves 3 bowls

Tools:
• Large frying pan
• Medium sauce pan
• Pairing knife 
• Spatula 

Ingredients:
• 1 medium yellow onion chopped into little pieces
• 3 medium tomatoes on the vine (cut out the stem part) & slice in half
• 1 Jalapeno chopped into little pieces 
• 3 avocados (1 for each bowl)
• 1 cup cooked white rice (approximately)
• 2 cups cooked lentils (approximately)
• Corn oil (approximately 2 tablespoons for the tomatoes & 1 for the rice and lentils)
• salt and pepper (desired amounts)

Instructions:
1) Sautรฉ the onion & jalapeno until soft and then add tomatoes and cook until soft. Mash up the tomatoes using the spatula as you’re cooking it.
2) Cook the lentils and rice per the instructions on the labels.
3) Combine lentils and rice, mix thoroughly. Add the tomato sauce and mix thoroughly. 
4) Add salt and pepper, mix thoroughly.
5) Put into bowl and top with one sliced avocado per bowl. 
Serve and enjoy! ๐Ÿ˜˜

Sloppy Hoagie


Today, I made veggie hoagies! There are many ways of making veggie hoagies. Here’s how I made them today! :)

(It came out upside down by accident!)

Serves 2 Hoagies

Tools:

• Bowl
• Plate
• Fork
• Pairing knife
• Butter knife

Ingredients:

• 2 avocados (peeled)
• Italian salad kit with balsamic vinaigrette 
• 1 tomato (sliced into bite sized pieces)
• 1/3 of a large white onion (sliced and chopped into tiny pieces)
• Mustard
• Salt

Prep time = approximately 15 minutes

Instructions:
1) chop up onion add to the bowl
2) add avocados and desired amount of salt to the onion and mash it all up, mix it together.



3) Prepare the tomatoes: slice, top with desired amount of salt, and the cut into bite sized pieces. 
                
4) cut the bread open, add the mustard, even out the mustard across the bread.
               
5) Add the avocado (on the bottom part, not the top, unlike what I did)
                
6) Add lettuce, add tomatoes, top with the balsamic vinegar.
                
6) Push it all in using the knife!
                
7) Serve and enjoy!! ๐Ÿ˜˜

Sautรฉed Zucchini Mixed with Rice & Topped with Guacamole



Sautรฉed Zucchini Mixed with Rice & Topped with Guacamole

Serves 2 plates

Prep time = 10-15 minutes 
Cooking time 10-20 minutes depending on the rice 
+ Plus guacamole see attached recipe below.


Sautรฉed Zucchini:

1 small yellow onion chopped up into tiny pieces
• 4 small zucchini’s sliced into 1/6 inch circles and then into quarters.
• 1 jalapeno chopped into tiny pieces. 
• Handful of sweet cherry tomatoes 
• Salt (desired amount)
• Corn oil (approximately 1.5 tablespoons)

Rice:
• Approximately 2 cups of cooked white rice
• corn oil (1-2 teaspoons)

Guacamole:

Instructions
1) sautรฉ the veggies until fully cooked 
2) cook the rice simultaneously per the instructions on the label.
3) once the rice is done, mix the sautรฉed veggies in with the rice. 
4) serve on a plate and top with guacamole.

Guacamole ๐Ÿฅ‘ ๐Ÿง…๐Ÿ…๐ŸŒฟ๐Ÿ‹‍๐ŸŸฉ๐Ÿง‚๐ŸŒถ️



Guacamole 
Prep time = 5 minutes
“Cooking” time = 15 minutes 

Tools:
• Bowl
• Pairing knife 
• Fork
• Paper towels

Preparation:
Rinse off all the ingredients in water & dry using paper towels. 

Ingredients:
• 2 avocados (peeled)
• 1/2 jalapeno: sliced into tiny pieces 
• 2/3 small yellow onion or preferably the equivalent amount except a red onion: sliced into tiny pieces 
• 4 small, sweet cherry tomatoes (diced into 1/8s)
• 1/2 a lime (squeezed)
• Cilantro (approximately 10 leaves ripped into tiny pieces)
• salt (preferably iodized salt): desired amount 

Instructions:
Put ingredients into a bowl (except for the tomatoes). Mash it all up and mix it, finally add the tomatoes and mix them in.
Serve and enjoy! ๐Ÿ˜˜ 

Note: guacamole can also be served on top of rice and beans. YUM!
