I just cooked a FEAST!!!
Potatoes, carrots, mushrooms, and onions!!! ๐
But seriously this needs to be topped with sliced avocado (which I don’t have). ๐ฅ Plus salt and pepper (ofc).
Ingredients:
• 5 medium russet potatoes (peeled and cut into bite sized pieces)
• 4 carrots (cut into 1/4 inch thick, tiny circles, peeling not necessary)
• Small box of white or baby bella mushrooms (sliced into thirds and/or quarters for white and just sliced normal for baby bella ) approximately 10 mushrooms.
• One yellow onion (peeled & sliced into tiny pieces)
• (optional) 1-2 sliced avocados ๐ฅ
• Idolized salt and pepper to taste
• Corn oil (2-3 tablespoons. I just eyed it)
Other variations: add ketchup or spicy brown mustard.
Tools:
• Pairing knife
• Spatula
• Large Non-Stick Casserole Skillet
Instructions:
Prep time: approximately 10 minutes
Cooking Time: Approximately 10-15 minutes.
Put all the ingredients in a skillet, pour the oil on top of it all. Turn on stovetop on high. Cook covered, flipping it all around with spatula frequently (every 1-2 minutes). Once everything is hot (or starts getting mushy despite not being thoroughly cooked) lower to medium-high. You’ll know it’s done when potatoes and carrots cut in half easily with spatula but just double check by biting into the thickest potato.
Mix in salt and pepper.
Put into plates.
Top with at least half a sliced avocado per plate.
Serve and enjoy! ๐
