*Note: Yours may look different. I had to improvise because I only have one burner and it only cooks on high.
Serves 3 bowls
Tools:
• Large frying pan
• Large frying pan
• Medium sauce pan
• Pairing knife
• Spatula
Ingredients:
• 1 medium yellow onion chopped into little pieces
• 3 medium tomatoes on the vine (cut out the stem part) & slice in half
• 1 Jalapeno chopped into little pieces
• 3 avocados (1 for each bowl)
• 1 cup cooked white rice (approximately)
• 2 cups cooked lentils (approximately)
• Corn oil (approximately 2 tablespoons for the tomatoes & 1 for the rice and lentils)
• salt and pepper (desired amounts)
Instructions:
1) Sautรฉ the onion & jalapeno until soft and then add tomatoes and cook until soft. Mash up the tomatoes using the spatula as you’re cooking it.
2) Cook the lentils and rice per the instructions on the labels.
3) Combine lentils and rice, mix thoroughly. Add the tomato sauce and mix thoroughly.
4) Add salt and pepper, mix thoroughly.
5) Put into bowl and top with one sliced avocado per bowl.
Serve and enjoy! ๐
